
Savory Cheddar Scallion Oatmeal with Soft-Boiled Egg

Ingredients
- 1 cup old-fashioned rolled oats
- 1 1/2 cups water
- 1/2 cup whole milk
- 1/2 tsp kosher salt
- 3/4 cup sharp cheddar cheese, shredded
- 3 scallions, thinly sliced
- 1 tbsp unsalted butter
- 2 large eggs
- 1/4 tsp black pepper
- to taste hot sauce
- 1 tsp everything bagel seasoning
Instructions
- 1Bring a small saucepan of water to a rolling boil over high heat for the eggs. Gently lower in large eggs with a spoon and boil exactly 6 minutes 30 seconds for jammy yolks. Immediately transfer eggs to an ice bath for 2 minutes, then peel carefully under cool water.
- 2Meanwhile, combine the rolled oats, water, milk, and kosher salt in a medium saucepan. Bring to a simmer over medium heat, then reduce to medium-low.
- 3Cook the oats, stirring frequently with a wooden spoon, until thick and creamy, 5 to 7 minutes. The mixture should look glossy and pull away slightly from the sides of the pan.
- 4Remove the oatmeal from heat. Stir in the butter until melted, then fold in shredded cheddar and most of the sliced scallions (reserve some green tops for garnish). Taste and adjust salt if needed.
- 5Divide the savory oatmeal between two warm bowls. Place one soft-boiled egg on top of each bowl and slice it open so the jammy yolk runs into the oats.
- 6Sprinkle the remaining cheddar, reserved scallion greens, black pepper, and everything bagel seasoning over each bowl. Add a few dashes of hot sauce if you like heat.
