Ingredients
- 2 cups frozen peach slices
- 1 1/2 cups low-fat cottage cheese
- 1/2 cup plain Greek yogurt
- 1/2 cup unsweetened almond milk
- 1 scoop vanilla protein powder
- 1 ripe fresh peach
- 2 tbsp honey
- 1 tbsp chia seeds
- 3 tbsp sliced almonds
- 1/4 cup granola
- 1/2 cup fresh blueberries
- 1/4 tsp ground cinnamon
- 1 pinch of salt
Instructions
- 1Add the frozen peach slices, cottage cheese, Greek yogurt, almond milk, protein powder, honey, cinnamon, and salt to a high-speed blender.
- 2Blend on high 45–60 seconds, stopping once to scrape down the sides, until completely smooth, thick, and creamy like soft-serve.
- 3If the mixture is too thick to blend, add another splash of almond milk; if too thin, add a few more frozen peach slices.
- 4Taste and adjust sweetness with an extra drizzle of honey if needed.
- 5Divide the smoothie base between two shallow bowls, using the back of a spoon to create a swirl pattern on top.
- 6Pit and thinly slice the fresh peach.
- 7Arrange the fresh peach slices, blueberries, granola, sliced almonds, and a sprinkle of chia seeds in neat rows or clusters over each bowl.
- 8Serve immediately with a spoon while the base is still frosty and thick.
- 9For extra staying power on school mornings, stir an additional spoonful of cottage cheese into the base before topping.
