Ingredients
- 3 large ripe peaches
- 1 large frozen banana
- 1 cup plain Greek yogurt
- 1/2 cup unsweetened almond milk
- 1/4 cup packed fresh basil leaves
- 2 tbsp honey
- 1 tbsp fresh lime juice
- 1/2 tsp vanilla extract
- 1 cup ice cubes
- 2/3 cup store-bought or homemade granola
- 1/4 tsp chili powder
- 1 tsp lime zest
- 1/4 cup toasted coconut flakes
- 1/2 cup fresh blueberries or raspberries
- 1 tbsp chia seeds
Instructions
- 1Pit the peaches and cut into chunks; if they are very ripe and soft they will blend silkier. Peel the frozen banana and break into pieces.
- 2Add the peach chunks, frozen banana, Greek yogurt, almond milk, most of the basil leaves, honey, lime juice, vanilla, and ice to a high-speed blender.
- 3Blend on high until completely smooth and thick enough to eat with a spoon, 45 to 60 seconds, stopping once to scrape down the sides. The mixture should hold soft peaks when the blender stops; if too thin, add a few more ice cubes and blend again.
- 4In a small bowl toss the granola with the chili powder and lime zest until evenly coated and fragrant.
- 5Divide the thick smoothie between two chilled bowls, using the back of a spoon to create a shallow well in the center if desired.
- 6Arrange the chili-lime granola in a crescent on one side of each bowl. Scatter toasted coconut, fresh berries, chia seeds, and the remaining torn basil leaves over the top.
- 7Finish with an extra tiny drizzle of honey and a pinch more lime zest for brightness.
- 8Serve immediately with a spoon while the smoothie is still frosty and the granola stays crunchy—perfect for a hot late-August morning with zero stove time.
