TrendingBreakfastBrunchSavoryToastMediterranean
Ingredients
- 2 thick sourdough or country bread slices
- 6 oz halloumi cheese
- 1 large ripe avocado
- 1 Tbsp lemon juice
- 1 Tbsp extra-virgin olive oil
- 2 Tbsp honey
- 1/2 tsp red pepper flakes or chili crisp
- 1/2 cup cherry tomatoes, halved
- 2 Tbsp fresh mint or basil leaves
- 1/2 tsp flaky sea salt
- to taste black pepper
- 1 tsp everything bagel seasoning (optional)
Instructions
- 1Stir the honey and red pepper flakes together in a small microwave-safe cup; microwave 10–15 seconds until fluid and fragrant, then set aside so the chili infuses. Slice the halloumi into 1/3-inch thick planks and pat very dry with paper towels.
- 2Heat a dry nonstick or cast-iron skillet over medium heat. Toast the bread slices 1–2 minutes per side until deep golden and crisp; transfer to plates.
- 3Add the olive oil to the same skillet. When it shimmers, lay in the halloumi planks in a single layer. Cook undisturbed 2–3 minutes until a deep golden crust forms, then flip and cook another 2 minutes until the second side is browned and the cheese is soft inside.
- 4While the halloumi cooks, halve the avocado, remove the pit, and scoop the flesh into a bowl. Add lemon juice, flaky salt, and black pepper; mash roughly with a fork so some chunks remain.
- 5Spread the smashed avocado thickly over each toast. Nestle the hot halloumi planks on top.
- 6Scatter halved cherry tomatoes and torn mint or basil over the cheese. Drizzle generously with the warm hot honey so it pools in the avocado crevices.
- 7Finish with a final pinch of flaky salt, more black pepper, and everything bagel seasoning if you like extra crunch.
- 8Serve immediately while the halloumi is still squeaky-soft and the toast is crisp. Eat with a knife and fork—the honey will drip.
