Ingredients

  • 2 thick sourdough or country bread slices
  • 6 oz halloumi cheese
  • 1 large ripe avocado
  • 1 Tbsp lemon juice
  • 1 Tbsp extra-virgin olive oil
  • 2 Tbsp honey
  • 1/2 tsp red pepper flakes or chili crisp
  • 1/2 cup cherry tomatoes, halved
  • 2 Tbsp fresh mint or basil leaves
  • 1/2 tsp flaky sea salt
  • to taste black pepper
  • 1 tsp everything bagel seasoning (optional)

Instructions

  1. 1Stir the honey and red pepper flakes together in a small microwave-safe cup; microwave 10–15 seconds until fluid and fragrant, then set aside so the chili infuses. Slice the halloumi into 1/3-inch thick planks and pat very dry with paper towels.
  2. 2Heat a dry nonstick or cast-iron skillet over medium heat. Toast the bread slices 1–2 minutes per side until deep golden and crisp; transfer to plates.
  3. 3Add the olive oil to the same skillet. When it shimmers, lay in the halloumi planks in a single layer. Cook undisturbed 2–3 minutes until a deep golden crust forms, then flip and cook another 2 minutes until the second side is browned and the cheese is soft inside.
  4. 4While the halloumi cooks, halve the avocado, remove the pit, and scoop the flesh into a bowl. Add lemon juice, flaky salt, and black pepper; mash roughly with a fork so some chunks remain.
  5. 5Spread the smashed avocado thickly over each toast. Nestle the hot halloumi planks on top.
  6. 6Scatter halved cherry tomatoes and torn mint or basil over the cheese. Drizzle generously with the warm hot honey so it pools in the avocado crevices.
  7. 7Finish with a final pinch of flaky salt, more black pepper, and everything bagel seasoning if you like extra crunch.
  8. 8Serve immediately while the halloumi is still squeaky-soft and the toast is crisp. Eat with a knife and fork—the honey will drip.
