
Freezer-Friendly Black Bean Breakfast Burritos

Ingredients
- 6 large flour tortillas (10-inch)
- 10 large eggs
- 1 (15 oz) can canned black beans, drained and rinsed
- 1 1/2 cups shredded sharp cheddar cheese
- 3 cups packed baby spinach
- 1 medium red bell pepper, diced
- 1 small yellow onion, diced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- to taste hot sauce
- for serving salsa or pico de gallo
Instructions
- 1Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper and cook, stirring occasionally, until softened and lightly browned at the edges, 5–6 minutes.
- 2Add the black beans, cumin, chili powder, salt, and pepper. Cook 2 minutes more until fragrant and warmed through; transfer the mixture to a bowl and wipe the skillet clean.
- 3In the same skillet heat the remaining oil over medium-low. Crack the eggs into a bowl, season with remaining salt and pepper, and whisk until uniform.
- 4Pour eggs into the skillet and scramble gently, pushing from the edges toward the center, until just set but still soft and moist, 3–4 minutes. Remove from heat and fold in the spinach so it wilts from residual heat.
- 5Warm the tortillas one at a time in a dry skillet 15–20 seconds per side or wrap in a damp towel and microwave 30 seconds so they are pliable.
- 6Lay a tortilla flat and layer down the center: a scoop of scrambled eggs and spinach, a spoonful of the black-bean mixture, and a generous sprinkle of cheddar. Add a few dashes of hot sauce if desired.
- 7Fold the short sides in, then roll tightly from the bottom to form a burrito. Repeat with remaining tortillas and fillings.
- 8To serve immediately, place burritos seam-side down in a dry skillet over medium heat and toast 1–2 minutes per side until golden and the cheese melts. Serve with salsa. For meal prep, wrap each cooled burrito in foil and freeze up to 2 months; reheat from frozen in a 375°F oven for 25–30 minutes or microwave after removing foil.
