- 1 tbsp butter
- 1/2 tsp ground cumin
- 3/4 tsp kosher salt
- 1/4 tsp black pepper

- 1Make the pico first: dice the tomato, finely chop the red onion and cilantro, mince the jalapeño (remove seeds for milder heat), and combine in a bowl with the fresh corn kernels. Squeeze in the lime juice, season with salt, and set aside so the flavors marry.
- 2Crack the eggs into a bowl, add the cumin, salt, and black pepper, and whisk until the whites and yolks are fully blended and slightly frothy. Warm the black beans in a small saucepan or microwave until steaming.
- 3Melt the butter in a nonstick skillet over medium-low heat. Pour in the eggs and cook slowly, pushing gently with a spatula from the edges toward the center every 20 seconds so large soft curds form.
- 4Stop cooking while the eggs still look slightly glossy and underdone—they will finish with residual heat. Immediately fold in half the pepper jack so it melts into the soft scramble.
- 5Warm the tortillas one at a time in a dry skillet or over a low gas flame for 15–20 seconds per side until pliable and lightly toasted in spots. Keep them stacked under a clean towel.
- 6Lay each tortilla flat and layer a strip of remaining cheese down the center, then black beans, a generous scoop of soft scramble, and a spoonful of the fresh pico. Add a few dashes of hot sauce if desired.
