  • 2 cups plain nonfat Greek yogurt
  • 1.5 cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 1/2 cup granola
  • 1 tbsp chia seeds
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1/2 tsp lemon zest
  • 2 tbsp sliced almonds
  • 1/4 tsp ground cinnamon

Instructions

  1. 1In a mixing bowl, stir the Greek yogurt with the vanilla extract, lemon zest, and half the honey until smooth and lightly sweetened. Taste and adjust sweetness if desired.
  2. 2Wash and dry the berries thoroughly. Hull and slice the strawberries; leave blueberries and raspberries whole so they keep their shape in the layers.
  3. 3Spoon a generous layer of the flavored yogurt into the bottom of each parfait glass or jar, using one-quarter of the total yogurt per glass for the first layer.
  4. 4Add a layer of mixed berries, then a light sprinkle of chia seeds and cinnamon. The chia will soften slightly and add texture as the parfait sits.
  5. 5Repeat the layers: another scoop of yogurt, more berries, and a spoonful of granola for crunch. Finish with a final dollop of yogurt on top.
  6. 6Drizzle the remaining honey over the top of each parfait. Scatter sliced almonds and any leftover granola so every bite has crisp contrast.
  7. 7Chill for 5 to 10 minutes if you prefer the flavors to meld, or serve immediately for maximum granola crunch.
