Ingredients
- 12 oz, sliced cremini mushrooms
- 1 1/2 cups sugar pie pumpkin puree
- 1 medium, diced yellow onion
- 3, minced garlic cloves
- 12 oz ground turkey
- 1 can (15 oz), drained canned black beans
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 1/2 cups vegetable broth
- 2 tbsp chili powder
- 1 1/2 tsp ground cumin
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 2 cups cooked quinoa
- 1/4 cup chopped fresh cilantro
- 1, cut into wedges lime
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- 1Heat olive oil in a large Dutch oven or deep skillet over medium-high heat until it shimmers. Add the diced onion and cook 4 to 5 minutes until translucent and starting to brown at the edges.
- 2Stir in the sliced mushrooms and salt. Sauté 6 to 8 minutes, stirring occasionally, until the mushrooms release their liquid and turn deep golden.
- 3Add the minced garlic and cook 30 seconds until fragrant. Push the vegetables to the side and add the ground turkey, breaking it up with a wooden spoon until no pink remains, about 5 minutes.
- 4Sprinkle in the chili powder, cumin, smoked paprika, remaining salt, and pepper. Toast the spices with the meat and vegetables for 1 minute so they bloom.
- 5Stir in the pumpkin puree, drained black beans, fire-roasted tomatoes, and vegetable broth. Bring the mixture to a gentle simmer.
- 6Reduce heat to medium-low, cover partially, and simmer 15 to 18 minutes, stirring every few minutes, until the chili thickens and the flavors meld. The surface should look glossy and slightly reduced.
- 7Taste and adjust seasoning with more salt or a squeeze of lime if it needs brightness. The pumpkin should taste sweet and earthy against the smoky spices.
- 8Scoop warm quinoa into four bowls, ladle the chili over the top, and finish with chopped cilantro and lime wedges. Serve family-style so everyone can build their own bowl.
