Ingredients

  • 3/4 cup steel-cut oats
  • 2 cups small-diced butternut squash
  • 2 cups vegetable broth
  • 1 cup water
  • 8 leaves fresh sage leaves
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 minced shallot
  • 1 minced garlic clove
  • 1/3 cup grated Parmesan
  • 3 tbsp toasted pumpkin seeds
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 tsp maple syrup
  • 1/2 tsp lemon zest

Instructions

  1. 1Warm olive oil in a medium saucepan over medium heat. Add half the sage leaves and fry 30 to 40 seconds until crisp; transfer to a plate and set aside for garnish.
  2. 2In the same pan add the diced butternut squash, salt, and the remaining olive oil. Sauté 6 to 8 minutes, stirring often, until the squash is caramelized on the edges and nearly tender.
  3. 3Push the squash aside, melt the butter, and stir in the minced shallot and garlic. Cook 1 minute until soft and fragrant, then fold everything together.
  4. 4Pour in the steel-cut oats and toast them with the vegetables for 1 minute so they pick up the sage-butter aroma.
  5. 5Add the vegetable broth, water, remaining salt, and black pepper. Bring to a gentle boil, then reduce heat to low, cover, and simmer 20 to 25 minutes, stirring every few minutes, until the oats are creamy and the squash is fully soft.
  6. 6Stir in the Parmesan, maple syrup, and lemon zest off the heat; the cheese melts into a silky finish while the zest lifts the earthiness.
  7. 7If the oatmeal is thicker than you like, loosen with a splash of hot water. Taste and adjust salt or pepper.
  8. 8Divide between two warm bowls. Top each with the reserved crispy sage leaves and a generous sprinkle of toasted pumpkin seeds for crunch. Serve immediately.
