Ingredients

  • 10 large eggs
  • 8 ounces fresh cremini mushrooms
  • 1 medium crisp apple
  • 1 shallot
  • 8 fresh sage leaves
  • 3/4 cup grated Parmesan cheese
  • 1/3 cup whole milk
  • 2 tablespoons olive oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh chives, snipped
  • 1 teaspoon butter for greasing

Instructions

  1. 1Preheat the oven to 375°F and generously butter a 12-cup muffin tin so the bites release cleanly.
  2. 2Clean and finely chop the mushrooms; peel and mince the shallot; core and dice the apple into small cubes; chiffonade the sage.
  3. 3Heat olive oil in a skillet over medium heat and sauté the mushrooms and shallot until the mushrooms are browned and any liquid has evaporated, about 7 to 8 minutes.
  4. 4Add the diced apple and sage to the pan and cook 2 more minutes just until the apple softens slightly but still holds its shape; season with the salt and pepper.
  5. 5Remove the skillet from heat and let the mixture cool a few minutes so it does not scramble the eggs.
  6. 6In a large bowl whisk the eggs with the milk, remaining salt and pepper, and most of the Parmesan until well blended.
  7. 7Divide the mushroom-apple mixture evenly among the muffin cups, then pour the egg mixture over the top, filling each cup three-quarters full.
  8. 8Sprinkle the remaining Parmesan over each cup.
  9. 9Bake 18 to 22 minutes until the frittata bites are puffed, set in the center, and lightly golden on top.
  10. 10Cool in the pan 5 minutes, then run a thin knife each edge and lift the bites out.
  11. 11Garnish with snipped chives and arrange on a platter; they hold well at room temperature for a brunch buffet or can be reheated gently later.
