  • 8 slices cinnamon raisin bread
  • 8 oz, sliced sharp cheddar cheese
  • 4 oz, softened cream cheese
  • 4 tbsp, softened unsalted butter
  • 2 tbsp honey
  • 1/2 tsp ground cinnamon
  • 1 pinch pinch of salt

Instructions

  1. 1Lay out the cinnamon raisin bread slices on a clean work surface so you can build all sandwiches at once.
  2. 2In a small bowl stir the softened cream cheese with honey, ground cinnamon, and salt until smooth and lightly sweet.
  3. 3Spread a thin layer of the spiced cream cheese mixture on one side of every bread slice, reaching nearly to the edges.
  4. 4Layer sharp cheddar slices over the cream cheese on four of the bread pieces, overlapping slightly for even melt coverage.
  5. 5Top each with a second bread slice, cream-cheese side down, to form closed sandwiches and press gently to seal.
  6. 6Spread softened butter evenly on the outer faces of each sandwich so both sides will crisp and brown.
  7. 7Heat a large skillet or griddle over medium heat until a drop of water sizzles on contact.
  8. 8Place two sandwiches in the pan and cook 3 to 4 minutes per side, pressing lightly with a spatula, until the bread is deep golden and the cheese is fully melted.
  9. 9Transfer finished sandwiches to a cutting board and repeat with the remaining two, adjusting heat if the raisins threaten to scorch.
  10. 10Let each sandwich rest 1 minute so the molten cheese settles, then slice diagonally to show the gooey interior and raisin flecks.
