
Grilled Cinnamon Raisin Cheese Sandwiches

- 8 slices cinnamon raisin bread
- 8 oz, sliced sharp cheddar cheese
- 4 oz, softened cream cheese
- 4 tbsp, softened unsalted butter
- 2 tbsp honey
- 1/2 tsp ground cinnamon
- 1 pinch pinch of salt
Instructions
- 1Lay out the cinnamon raisin bread slices on a clean work surface so you can build all sandwiches at once.
- 2In a small bowl stir the softened cream cheese with honey, ground cinnamon, and salt until smooth and lightly sweet.
- 3Spread a thin layer of the spiced cream cheese mixture on one side of every bread slice, reaching nearly to the edges.
- 4Layer sharp cheddar slices over the cream cheese on four of the bread pieces, overlapping slightly for even melt coverage.
- 5Top each with a second bread slice, cream-cheese side down, to form closed sandwiches and press gently to seal.
- 6Spread softened butter evenly on the outer faces of each sandwich so both sides will crisp and brown.
- 7Heat a large skillet or griddle over medium heat until a drop of water sizzles on contact.
- 8Place two sandwiches in the pan and cook 3 to 4 minutes per side, pressing lightly with a spatula, until the bread is deep golden and the cheese is fully melted.
- 9Transfer finished sandwiches to a cutting board and repeat with the remaining two, adjusting heat if the raisins threaten to scorch.
