Baked Oatmeal Pumpkin Custard

Baked oatmeal has long been a comforting American breakfast staple, especially when autumn spices fill the kitchen. This pumpkin custard version folds rolled oats into a silky maple-sweetened base, then bakes until set with a pecan crunch on top.

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup pumpkin puree
  • 1 1/2 cups whole milk
  • 2 large eggs
  • 1/3 cup maple syrup
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 2 tsp pumpkin pie spice
  • 1/2 tsp kosher salt
  • 1 tsp baking powder
  • 3 tbsp melted unsalted butter
  • 1/3 cup chopped pecans
  • for topping optional plain Greek yogurt or whipped cream for serving

Instructions

  1. 1Preheat the oven to 350°F. Lightly grease an 8-inch square baking dish with butter or nonstick spray so the custard releases cleanly.
  2. 2In a large mixing bowl, whisk the pumpkin puree, milk, eggs, maple syrup, brown sugar, vanilla, pumpkin pie spice, and salt until completely smooth and uniform in color.
  3. 3Stir in the rolled oats and baking powder until every flake is coated. Let the mixture sit for 5 minutes so the oats begin to hydrate and thicken the custard base.
  4. 4Pour in the melted butter and fold gently until incorporated. The batter should look loose but spoonable, similar to a thick pancake batter.
  5. 5Transfer the mixture to the prepared baking dish and spread it into an even layer. Sprinkle the chopped pecans evenly over the top.
  6. 6Bake on the center rack for 35 to 40 minutes until the center is set and no longer jiggles when the dish is gently shaken, and the edges are lightly browned.
  7. 7A toothpick inserted in the center should come out mostly clean with a few moist crumbs. If the top browns too quickly, tent loosely with foil for the last 10 minutes.
  8. 8Cool the baked oatmeal on a wire rack for at least 10 minutes so the custard firms up enough to slice into neat squares.
  9. 9Serve warm or at room temperature, optionally topped with a spoonful of Greek yogurt or lightly sweetened whipped cream for contrast.
