Ingredients

  • 4 pieces store-bought flatbreads or naan
  • 12 oz, sliced mixed mushrooms (cremini and shiitake)
  • 1/2 cup fresh apple cider
  • 1 large, thinly sliced apple
  • 1 large, thinly sliced shallot
  • 8 fresh sage leaves
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 1/2 cups shredded mozzarella
  • 1/3 cup crumbled blue cheese
  • 2 tbsp balsamic glaze
  • 3/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped fresh parsley

Instructions

  1. 1Preheat the oven to 450°F and place two large baking sheets inside to heat. This gives the flatbreads a crisp bottom.
  2. 2Heat olive oil and butter in a large skillet over medium-high heat. Add the sliced mushrooms and shallot with salt. Cook 7 to 9 minutes until the mushrooms are deeply browned and any liquid has evaporated.
  3. 3Pour in the apple cider and add the sage leaves. Simmer 3 to 4 minutes, stirring, until the cider reduces to a glossy glaze that coats the mushrooms. Season with remaining salt and pepper, then remove from heat.
  4. 4Carefully remove the hot baking sheets. Place the flatbreads on them and brush lightly with any remaining pan juices.
  5. 5Scatter mozzarella evenly over each flatbread, then spoon the cider-glazed mushrooms on top. Nestle thin apple slices among the mushrooms.
  6. 6Sprinkle blue cheese over everything. Bake 8 to 10 minutes until the cheese is melted and bubbling and the flatbread edges are golden and crisp.
  7. 7Drizzle each flatbread with balsamic glaze right out of the oven. The heat will make the glaze smell sweet and tangy.
  8. 8Scatter chopped parsley over the top, slice into quarters, and serve on a big board for easy sharing. The apples stay slightly crisp against the savory mushrooms.
