Ingredients
- 1 1/2 lb boneless skinless chicken thighs
- 3 ripe peaches
- 1 pint cherry tomatoes
- 1/2 cup fresh basil leaves
- 1/4 cup extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tsp honey
- 2 garlic clove, minced
- 1 1/4 tsp kosher salt
- 3/4 tsp black pepper
- 1/4 tsp red pepper flakes
- 8 wooden or metal skewers
Instructions
- 1If using wooden skewers, soak them in water for at least 20 minutes so they do not burn. Cut the chicken thighs into 1 1/2-inch pieces and place them in a bowl.
- 2Whisk together most of the olive oil, balsamic vinegar, honey, minced garlic, salt, black pepper, and red pepper flakes. Pour three-quarters of this marinade over the chicken, toss well, and let sit at room temperature for 15 minutes while you prep the fruit.
- 3Halve and pit the peaches, then cut them into thick wedges roughly the same size as the chicken pieces. Leave the cherry tomatoes whole.
- 4Thread the marinated chicken, peach wedges, and cherry tomatoes alternately onto the skewers, packing them snugly but not crushed. Brush the assembled skewers lightly with any remaining marinade.
- 5Preheat a grill or grill pan to medium-high heat, about 400°F. Oil the grates lightly. Grill the skewers, turning every 3 to 4 minutes, until the chicken is cooked through and shows deep grill marks and the peaches are lightly charred and juicy, 12 to 15 minutes total.
- 6Transfer the skewers to a platter. Drizzle with the reserved uncooked marinade mixture and the remaining olive oil.
- 7Tear the fresh basil leaves over the hot skewers so the heat releases their aroma. Let rest 2 minutes so juices settle.
- 8Serve the skewers immediately as a bright main, spooning any platter juices over the top.
