Ingredients

  • 1 lb fresh clam strips
  • 1 cup buttermilk
  • 1 tbsp hot sauce
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 2 tbsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp kosher salt
  • 4 cups neutral frying oil
  • 1 lemon fresh lemon wedges
  • 2 tbsp chopped fresh parsley
  • 1/2 cup ranch or Creole dipping sauce

Instructions

  1. 1In a bowl combine the buttermilk and hot sauce. Add the clam strips, stir to coat, and let them soak 15 minutes at room temperature; this tenderizes and helps the coating stick.
  2. 2In a wide shallow dish whisk together the flour, cornstarch, Cajun seasoning, garlic powder, smoked paprika, cayenne, and salt until evenly mixed.
  3. 3Lift the clams from the buttermilk, letting excess drip off, then toss them thoroughly in the seasoned flour mixture. Press gently so every piece is fully coated. For extra crunch, dip a second time in leftover buttermilk and flour if desired.
  4. 4Shake off loose flour and arrange the breaded clams on a clean plate or rack for 5 minutes so the crust hydrates slightly and adheres better during frying.
  5. 5Pour oil into a heavy Dutch oven or deep fryer to a depth of 2 inches and heat to 365°F. Carefully add a single layer of clam bites; do not crowd the pot.
  6. 6Fry 2½ to 3½ minutes, turning once with a spider or tongs, until the coating is deep golden-brown, blistered, and audibly crisp. The interior should stay juicy and tender.
  7. 7Transfer the finished bites to a paper-towel-lined tray or wire rack set over a sheet pan. Immediately dust with a pinch more Cajun seasoning and a little salt while the oil is still glistening.
  8. 8Pile the hot Cajun clam bites into a serving bowl or basket lined with parchment. Scatter chopped parsley over the top, tuck in lemon wedges, and serve with ranch or Creole sauce for dipping. Eat at once while the signature crispy shell is at its peak.
