Ingredients
- 1 cup old-fashioned rolled oats
- 3/4 cup all-purpose flour
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp kosher salt
- 2 large eggs
- 1 1/4 cups whole milk
- 3 tbsp plus more for serving maple syrup
- 1 tsp vanilla extract
- 1 large firm apple
- 4 tbsp unsalted butter
- 8 oz cremini mushrooms
- 6 fresh sage leaves
- 1 tsp apple cider vinegar
- 1/4 tsp black pepper
Instructions
- 1Pulse the oats in a blender or food processor until they resemble coarse flour. Whisk together the oat flour, all-purpose flour, baking powder, cinnamon, and salt in a large bowl.
- 2In a separate bowl whisk the eggs, milk, maple syrup, and vanilla until smooth. Grate half the apple on the large holes of a box grater and fold it into the wet mixture.
- 3Pour the wet ingredients into the dry and stir gently just until combined; a few lumps are fine. Let the batter rest 8–10 minutes so the oats hydrate.
- 4Meanwhile, thinly slice the remaining apple and the mushrooms. Melt half the butter in a skillet over medium heat, add mushrooms, and cook 5–6 minutes until browned and their liquid evaporates.
- 5Add the apple slices, torn sage, vinegar, and pepper; sauté 2–3 minutes more until the apples are tender-crisp and fragrant. Keep the topping warm.
- 6Heat a griddle or large nonstick skillet over medium heat and melt a little of the remaining butter. Scoop 1/4-cup portions of batter, spreading lightly into rounds.
- 7Cook pancakes 2–3 minutes per side until bubbles form on top, edges look set, and both sides are golden brown. Transfer to a warm plate and repeat with remaining batter, adding butter as needed.
- 8Stack pancakes on a platter or individual plates, spoon the warm mushroom-apple-sage mixture over the top, and finish with an extra drizzle of maple syrup. Serve family-style so guests can share.
