Bacon-Wrapped Jalapeño Poppers

Jalapeño poppers became a staple of American bar and game-day tables, balancing fiery peppers with cool, melty cheese. Wrapped in bacon and filled with cream cheese, cheddar, and Monterey Jack, they bake until the edges crisp and the centers bubble.

Ingredients

  • 12 fresh jalapeño peppers
  • 8 oz cream cheese
  • 1 cup shredded sharp cheddar
  • 1/2 cup shredded Monterey Jack
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 12 slices bacon strips
  • 2 green onions
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 12 toothpicks

Instructions

  1. 1Preheat oven to 400°F and line a rimmed baking sheet with foil; set a wire rack on top for maximum bacon crispness. Wear gloves if sensitive. Slice each jalapeño in half lengthwise and scrape out seeds and membranes with a small spoon for milder heat, or leave some seeds for extra fire.
  2. 2In a bowl beat softened cream cheese until smooth. Fold in both shredded cheeses, minced green onions, garlic powder, smoked paprika, salt, and pepper until fully combined and scoopable.
  3. 3Fill each jalapeño half generously with the cheese mixture, mounding it slightly above the rim. The filling should be packed so it stays put during cooking.
  4. 4Wrap each stuffed half with half a strip of bacon (or a full thin strip), spiral-wrapping so the bacon covers most of the cheese. Secure the end with a toothpick if needed. Place seam-side down on the rack.
  5. 5Bake 22 to 28 minutes until the bacon is deeply browned and crispy and the cheese is bubbling and lightly golden in spots. For extra-crisp bacon, broil the last 1 to 2 minutes watching closely so nothing burns.
  6. 6Let poppers rest 5 minutes on the rack so the molten cheese sets just enough to handle without completely oozing out. Remove toothpicks carefully.
  7. 7Transfer to a platter. The bacon drips and cheese pulls should be unmistakable—serve hot so every bite delivers greasy, spicy, creamy contrast.
  8. 8These reheat well under a broiler for 2 to 3 minutes if needed, but they are best fresh from the oven when the bacon is still shatter-crisp.
