Ingredients
- 1.25 lb ground beef (80/20)
- 1 tsp kosher salt
- 0.75 tsp black pepper
- 8 slices thick-cut bacon
- 4 oz blue cheese crumbles
- 12 slider buns
- 3 tbsp butter
- 0.3 cup mayonnaise
- 1 tbsp Dijon mustard
- 2 tbsp fresh chives
- 2 cups arugula
Instructions
- 1Cook the bacon in a large skillet over medium heat until crisp and rendered, about 8 to 10 minutes; drain on paper towels, then chop into bite-size pieces and reserve a spoonful of bacon fat.
- 2Form the ground beef into twelve small slider patties, seasoning both sides lightly with salt and pepper; keep them thin so they cook quickly.
- 3Wipe the skillet, add a little reserved bacon fat, and heat over medium-high until shimmering.
- 4Sear the slider patties in batches for 2 minutes per side until browned and just cooked through; in the final minute top each with a generous pinch of blue cheese crumbles so they soften and melt.
- 5Split the slider buns and brush the cut sides with melted butter; toast cut-side down in the pan until golden.
- 6Stir mayonnaise, Dijon, and snipped chives together for a quick blue-cheese-friendly spread.
- 7Spread the herbed mayo on the bottom buns, add a small handful of peppery arugula, then place a cheesy patty on each.
- 8Scatter chopped bacon over the melted blue cheese, cap with the top buns, and serve warm so the cheese stays creamy and the bacon stays crisp.
