  • 8 sugar ice cream cones
  • 1 1/2 cups whole-milk ricotta
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup chopped pistachios
  • 1/3 cup maraschino cherries
  • 1/4 cup mini chocolate chips
  • 1/4 cup heavy cream
  • 1/3 cup melted dark chocolate

Instructions

  1. 1Drain the ricotta in a fine-mesh strainer for 10 minutes if it looks wet, then transfer to a mixing bowl.
  2. 2Beat the ricotta with powdered sugar and vanilla until smooth and lightly fluffy.
  3. 3Fold in half the chopped pistachios, the drained and chopped maraschino cherries, and the mini chocolate chips.
