Ingredients

  • 1 1/2 cups fresh pecan halves
  • 1 cup packed Medjool dates, pitted
  • 1/4 cup unsweetened shredded coconut
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp fresh rosemary, finely minced
  • 1/4 tsp pinch of flaky sea salt
  • 1/4 cup extra chopped toasted pecans for rolling

Instructions

  1. 1Toast the pecan halves in a dry skillet over medium heat 3 to 4 minutes until fragrant and lightly browned; cool completely.
  2. 2Add the cooled toasted pecans to a food processor and pulse until finely chopped but not pasty.
  3. 3Add the pitted dates, shredded coconut, vanilla, cinnamon, minced rosemary, and salt.
  4. 4Process in short bursts, scraping the bowl, until the mixture sticks together when pressed between fingers.
  5. 5Scoop tablespoon-size portions and roll firmly between your palms into smooth balls.
  6. 6Roll each ball in the extra chopped toasted pecans so every bite is coated in nutty crunch.
  7. 7Arrange on a parchment-lined plate and chill 20 minutes so they firm up.
  8. 8Store covered in the fridge; serve cold or at cool room temperature for the best chewy-crunchy texture.
