
No-Bake Grape & Honey Cheesecake Bites

Ingredients
- 1 1/2 cups graham cracker crumbs
- 6 tbsp unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/4 cup honey
- 1 tsp vanilla extract
- 1 tsp fresh lemon zest
- 2 cups seedless red and green grapes, halved
- 1/4 cup chopped toasted pistachios
- 2 tbsp extra honey for drizzling
Instructions
- 1Line a mini muffin tin with paper liners or lightly grease 16 wells so the bites release cleanly.
- 2Stir the graham cracker crumbs with the melted butter until every crumb is moistened and the mixture resembles wet sand.
- 3Press a tablespoon of the crumb mixture firmly into the bottom of each well to form a compact crust base.
- 4In a medium bowl beat the softened cream cheese until completely smooth and free of lumps.
- 5Add the powdered sugar, honey, vanilla, and lemon zest; beat again until light, fluffy, and fully combined.
- 6Spoon or pipe the cheesecake mixture evenly over the crusts, smoothing the tops with the back of a small spoon.
- 7Press two or three grape halves gently into the top of each bite so they sit snugly without sinking too deep.
- 8Chill the tin uncovered in the refrigerator for at least 2 hours, or until the filling is firm to the touch.
- 9Just before serving, carefully lift each bite from the tin and arrange them on a large shareable platter.
- 10Drizzle lightly with extra honey and sprinkle the chopped pistachios over the tops for crunch and color.
- 11Keep chilled until guests arrive; these travel well in a flat container and stay neat on a dessert board for an hour or more.
