Ingredients
- 6 day-old glazed yeast donuts
- 4 oz cream cheese, softened
- 1/4 cup powdered sugar
- 2 tbsp cocoa powder
- 1 cup semi-sweet chocolate chips
- 1/3 cup heavy cream
- 1 tsp vanilla extract
- 1/3 cup chocolate sprinkles or crushed nuts
- 1 pinch pinch of salt
Instructions
- 1Tear the donuts into large pieces and pulse them in a food processor until fine, soft crumbs form that still smell of fried dough and glaze.
- 2In a mixing bowl beat the cream cheese with powdered sugar, cocoa powder, vanilla, and salt until smooth and chocolatey.
- 3Fold the donut crumbs into the cream-cheese mixture until a cohesive, moldable dough comes together that holds its shape when squeezed.
- 4Scoop small portions and roll them between your palms into neat bite-size balls, placing them on a parchment-lined tray.
- 5Chill the rolled truffles in the refrigerator until firm enough to dip without falling apart.
- 6Place the chocolate chips in a heatproof bowl; warm the cream until just simmering, then pour over the chips and let stand briefly.
- 7Stir the chocolate and cream until completely melted and glossy, adding a touch more cream if needed for a smooth dipping consistency.
- 8Using a fork or dipping tool, coat each chilled truffle in the melted chocolate, letting excess drip back into the bowl.
- 9Immediately roll or sprinkle the wet chocolate coating with sprinkles or crushed nuts before it sets.
- 10Return the finished truffles to the parchment tray and chill until the chocolate shell is firm and snappy.
- 11Arrange on a platter and serve chilled or at cool room temperature so the soft donut center contrasts with the crisp shell.
