Ingredients

  • 1 1/2 cups fresh cranberries
  • 16 oz cream cheese
  • 3/4 cup powdered sugar
  • 1/2 cup heavy cream
  • 1 1/2 cups graham cracker crumbs
  • 6 tbsp unsalted butter
  • 1 tsp orange zest
  • 1 tsp vanilla extract
  • 1/4 cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1/8 tsp pinch of salt

Instructions

  1. 1Line a mini muffin tin with paper liners or lightly grease a silicone mold so the bites release cleanly later.
  2. 2Melt the butter and stir it into the graham cracker crumbs until the mixture resembles wet sand and holds together when pressed.
  3. 3Press a heaping teaspoon of the crumb mixture firmly into the bottom of each cavity to form a compact crust base; chill the pan while you make the filling.
  4. 4In a small saucepan combine half the fresh cranberries with the granulated sugar and lemon juice; cook over medium heat for 6 to 8 minutes, stirring often, until the berries burst and the mixture thickens into a jammy sauce.
  5. 5Remove from heat, stir in the orange zest, and let the cranberry sauce cool completely so it will not melt the cream cheese.
  6. 6Beat the softened cream cheese with the powdered sugar, vanilla, and salt until completely smooth and fluffy with no lumps.
  7. 7Whip the heavy cream to soft peaks in a separate bowl, then gently fold it into the cream-cheese mixture to keep the filling light.
  8. 8Spoon or pipe the cheesecake filling over each crust, filling nearly to the top and smoothing the surface.
  9. 9Dollop a small spoonful of the cooled cranberry sauce on each bite and swirl lightly with a toothpick for a marbled look; scatter a few remaining raw cranberries on top for extra color and crunch.
  10. 10Chill the pan for at least 2 hours or until the bites are firm enough to lift out cleanly.
  11. 11Pop the bites from the molds, arrange on a platter, and serve cold straight from the fridge.
