Ingredients
- 1 lb refrigerated pizza dough
- 1 cup amber ale
- 2 cups shredded sharp cheddar cheese
- 4 oz cream cheese
- 3 tbsp butter
- 2 large yellow onions
- 12 oz cremini mushrooms
- 3 garlic cloves
- 2 tsp fresh thyme
- 1 tsp Dijon mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 2 tbsp flour for dusting
Instructions
- 1Slice the onions thin and cook them slowly in butter over medium-low heat, stirring often, until deeply golden and sweet.
- 2Add sliced mushrooms and minced garlic to the pan, raise the heat slightly, and cook until the mushrooms release their liquid and turn browned and meaty.
- 3Stir in the thyme, black pepper, and a splash of the amber ale to deglaze, scraping up any browned bits, then set the mixture aside.
- 4In a saucepan, melt remaining butter, whisk in a spoonful of flour to make a quick roux, then slowly pour in the rest of the amber ale while whisking.
- 5Add the cream cheese and shredded cheddar, stirring constantly over low heat until a smooth, glossy beer cheese sauce forms; finish with Dijon and Worcestershire.
- 6Preheat the oven and lightly oil a cast-iron skillet or pie pan. Stretch the pizza dough to fit, pressing it up the sides to form a rustic crust.
- 7Spread a generous layer of the warm beer-cheese sauce over the dough base, then spoon the caramelized onion and mushroom mixture evenly on top.
- 8Bake until the crust is deeply golden and the cheese is bubbling at the edges with browned spots.
- 9Let the pie rest a few minutes so the filling sets slightly, then slice into wedges.
- 10Serve hot with extra amber ale on the side for dipping crusts and washing down the rich beer-cheese flavors.
