Ingredients

  • 2 rounds refrigerated pie crusts
  • 3 medium ripe peaches
  • 3 tbsp granulated sugar
  • 1 tbsp cornstarch
  • 1/2 tsp ground cinnamon
  • 1 tsp fresh lemon juice
  • 1 beaten egg
  • 2 tbsp coarse sugar
  • 1/4 cup hot honey
  • 1 pinch kosher salt
  • optional dusting powdered sugar

Instructions

  1. 1Pit and dice the peaches into small 1/2-inch pieces. In a bowl toss them with granulated sugar, cornstarch, cinnamon, lemon juice, and salt until evenly coated; let sit 5 minutes so juices thicken slightly.
  2. 2Unroll the pie crusts on a lightly floured surface. Use a 4- to 5-inch round cutter or bowl to cut out 6 circles, re-rolling scraps as needed.
  3. 3Spoon a heaping tablespoon of the peach filling onto the center of each circle, leaving a clean 1/2-inch border. Do not overfill or the pies will leak.
  4. 4Brush the border lightly with beaten egg, fold the dough over into a half-moon, and press the edges firmly with a fork to seal. Cut two tiny steam vents on top of each pie.
  5. 5Brush the tops with remaining egg wash and sprinkle generously with coarse sugar for crunch.
  6. 6Preheat the air fryer to 350°F. Working in batches so they do not touch, air-fry the hand pies until deep golden and the filling is bubbling through the vents, 8 to 11 minutes. Flip halfway if your model browns unevenly.
  7. 7Transfer finished pies to a wire rack. While still warm, drizzle each with hot honey so it seeps into the vents and glazes the crust.
  8. 8Cool 5 minutes before eating—the filling is molten. Dust lightly with powdered sugar if desired.
