  • 3 cups fresh sweet corn kernels
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1/3 cup all-purpose flour
  • 4 tbsp unsalted butter, melted
  • 2 tsp vanilla extract
  • 3/4 tsp kosher salt
  • 4 medium ripe peaches
  • 2 tbsp unsalted butter for peaches
  • 2 tbsp honey
  • 1/4 tsp ground cinnamon
  • 1 tsp fresh thyme leaves optional garnish

Instructions

  1. 1Preheat the oven to 350°F. Butter an 8- or 9-inch square baking dish so the pudding releases cleanly for potluck-style scooping.
  2. 2In a blender combine half the corn kernels with the milk and cream. Blend until mostly smooth with a few flecks remaining for texture, about 20 seconds.
  3. 3In a large bowl whisk the eggs, granulated sugar, brown sugar, flour, melted butter, vanilla, and salt until smooth and slightly thickened.
  4. 4Stir the blended corn mixture and the remaining whole kernels into the egg base until evenly combined. The batter should look pale gold and pourable.
  5. 5Pour into the prepared dish and smooth the top. Bake 40 to 48 minutes until the center is just set, the edges are puffed and golden, and a knife inserted near the middle comes out mostly clean with moist crumbs.
  6. 6While the pudding bakes, slice the peaches into wedges. Melt the butter for the peaches in a wide skillet over medium-high heat until foaming.
  7. 7Add the peach wedges in a single layer and cook undisturbed 2 to 3 minutes until undersides caramelize and smell jammy. Flip, drizzle with honey and dust with cinnamon, and cook 2 minutes more until glossy and tender but not collapsed.
  8. 8Cool the pudding on a rack 15 minutes so it firms for neat servings. Cut into squares, top each portion with warm caramelized peaches and a few thyme leaves if using.
  9. 9Serve family-style on a weekend table; the pudding can be baked earlier, held at room temperature, and peaches finished just before guests gather for maximum wow.
