Ingredients

  • 3 cups coffee ice cream
  • 1/2 cup cold brewed espresso or strong coffee
  • 1/3 cup whole milk
  • 1/4 cup thick caramel sauce
  • 1/2 cup whipped cream
  • 1/4 tsp flaky sea salt

Instructions

  1. 1Chill two tall milkshake glasses in the freezer for 10 minutes so the shake stays frosty longer after blending.
  2. 2Add the coffee ice cream, cold espresso, and milk to a high-powered blender; start on low then ramp to high and blend for 20 to 30 seconds until thick, smooth, and pourable but still spoonable.
  3. 3Stop the blender and drizzle half of the caramel sauce down the inside walls of each chilled glass in a spiral so every sip catches a caramel ribbon.
  4. 4Pour the blended shake evenly into the prepared glasses, leaving a little headspace at the top for toppings.
  5. 5Warm the remaining caramel sauce briefly if needed so it drizzles easily, then swirl it over the surface of each shake in a loose figure-eight pattern.
  6. 6Crown each milkshake with a generous swirl of whipped cream that peaks above the rim.
  7. 7Finish with a light sprinkle of flaky sea salt over the cream and caramel to sharpen the coffee and caramel notes.
  8. 8Serve at once with wide straws and long spoons so drinkers can scoop the thick ice cream base and caramel pockets.
