Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 cup (2 sticks), chilled and cubed unsalted butter
  • 1 tsp salt
  • 6-8 tbsp ice water
  • 6 medium (about 2.5 lbs), peeled, cored, Granny Smith apples
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tbsp lemon juice
  • 2 tbsp cornstarch
  • 1, beaten (for egg wash) egg
  • 1 tbsp granulated sugar (for sprinkling)

Instructions

  1. 1In a large bowl, combine flour and salt. Add chilled cubed butter and cut in with a pastry blender or fork until mixture resembles coarse crumbs.
  2. 2Sprinkle in ice water at a time, mixing until dough just comes together. Divide into two disks, wrap in plastic, and chill in refrigerator for at least 30 minutes.
  3. 3Preheat oven to 425°F (220°C).
  4. 4In a large mixing bowl, toss sliced apples with lemon juice.
  5. 5Add granulated sugar, brown sugar, cinnamon, nutmeg, and cornstarch to the apples. Mix gently until evenly coated.
  6. 6On a lightly floured surface, roll out one dough disk into a 12-inch circle. Transfer to a 9-inch pie plate and trim edges.
  7. 7Fill the crust with the apple mixture, mounding slightly in the center.
  8. 8Roll out the second dough disk into a 12-inch circle and place over the filling. Trim, seal, and crimp the edges. Cut 4-small slits in the top crust for steam to escape.
  9. 9Brush the top crust with beaten egg and sprinkle with sugar.
  10. 10Bake at 425°F for 15 minutes, then reduce heat to 350°F (175°C) and bake an additional 35-40 minutes until crust is golden brown and filling is bubbly.
  11. 11Cool on a wire rack for at least 2 hours before slicing to allow filling to set.
  12. 12Serve warm or at room temperature, optionally with vanilla ice cream.
