  • 1 medium, sliced into half-moons delicata squash
  • 1.5 cups plain Greek yogurt
  • 1 cup cooked quinoa
  • 1 small, diced apple
  • 3 tbsp pumpkin seeds
  • 2 tbsp hemp seeds
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh parsley
  • 1.5 tbsp lemon juice
  • 1.5 tbsp olive oil
  • 2 tsp honey
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • pinch red pepper flakes

Instructions

  1. 1Preheat the oven to 400°F. Toss the delicata squash half-moons with olive oil, cumin, salt, and black pepper until every piece is coated.
  2. 2Arrange the squash in a single layer on a baking sheet and roast 18–20 minutes, flipping once, until the flesh is tender and the edges are lightly browned and caramelized.
  3. 3While the squash roasts, warm the cooked quinoa in a small pan over low heat with a splash of water, fluffing with a fork until hot and steamy, about 3 minutes.
  4. 4In a bowl, stir the Greek yogurt with lemon juice and salt until smooth, tangy, and slightly loosened; it should be spoonable but still thick.
  5. 5Dice the apple and toss it briefly with a few drops of lemon juice to keep it bright and prevent browning.
  6. 6Divide the warm quinoa between two bowls as the base. Spoon a generous swirl of the lemony yogurt over and the grains.
  7. 7Arrange the hot roasted squash and fresh apple dice on top of the yogurt so the heat gently warms the dairy without fully melting it.
