Ingredients
- 1 cup steel-cut oats
- 2 cups fresh pumpkin, peeled and diced small
- 2 medium crisp apples, diced
- 2 cups water
- 2 cups whole milk
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp ground cardamom
- 1/4 tsp salt
- 3 tbsp maple syrup
- 1 tbsp unsalted butter
- 1/4 cup toasted pumpkin seeds
- 1/2 cup extra diced apple for topping
Instructions
- 1Combine the steel-cut oats, diced fresh pumpkin, diced apples, water, milk, cinnamon, ginger, cardamom, and salt in a heavy 3-quart saucepan.
- 2Bring the mixture to a gentle boil over medium-high heat, stirring occasionally so nothing sticks to the bottom.
- 3Reduce heat to low, cover partially, and simmer steadily for 20 to 25 minutes, stirring every few minutes until the oats are tender and creamy.
- 4The pumpkin should soften into the porridge and the apples should hold soft shape while releasing their juices.
- 5Stir in the maple syrup and butter until melted and fully incorporated; taste and adjust warmth of spice if needed.
- 6If the porridge thickens too much, loosen with a splash of warm milk until it reaches a spoonable consistency.
- 7Remove from heat and let stand covered for 2 minutes so the flavors settle.
- 8Ladle into warm bowls and top each serving with extra fresh diced apple and a generous sprinkle of toasted pumpkin seeds.
- 9Serve immediately while steaming hot for the best texture contrast between creamy oats and crunchy seeds.
