Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 2 cups whole milk
  • 1 cup water
  • 2 medium Honeycrisp apples
  • 8 oz cremini mushrooms
  • 2 tbsp unsalted butter
  • 2 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 tsp fresh thyme leaves
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/3 cup toasted walnuts
  • 3 tbsp heavy cream

Instructions

  1. 1Dice one apple into small cubes and thinly slice the second apple for topping. Wipe mushrooms clean and slice them thinly so they cook quickly.
  2. 2In a medium saucepan combine the oats, milk, water, diced apple, cinnamon, nutmeg, and salt. Bring to a gentle simmer over medium heat, stirring often.
  3. 3Reduce heat to low and cook the oatmeal, stirring frequently, until thick and creamy, about 8 to 10 minutes. The apples should soften into the oats and perfume the whole pot.
  4. 4Meanwhile, melt half the butter in a 10-inch skillet over medium-high heat. Add the mushrooms in a single layer and cook undisturbed for 3 minutes until the undersides brown.
  5. 5Season the mushrooms with salt, pepper, and thyme. Continue sautéing, stirring occasionally, until deeply golden and any liquid has evaporated, about 5 minutes more. Stir in the remaining butter and a drizzle of maple syrup to glaze.
  6. 6Toast the walnuts in a dry pan for 2 minutes until fragrant, then roughly chop.
  7. 7Spoon the warm oatmeal into bowls. Top each portion with the glazed mushrooms, the reserved apple slices, toasted walnuts, a swirl of cream, and the remaining maple syrup.
  8. 8Finish with an extra crack of black pepper and a few fresh thyme leaves. Serve immediately while the contrast of creamy oats and savory mushrooms is hottest.
