Ingredients
- 1 cup old-fashioned rolled oats
- 1 1/2 cups whole milk
- 1/2 cup water
- 1 large firm sweet-tart apple
- 1 Tbsp unsalted butter
- 2 Tbsp pure maple syrup
- 3/4 tsp ground cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp ground cardamom
- 1 pinch ground cloves
- 1/4 tsp kosher salt
- 1/4 cup chopped toasted walnuts
- 2 Tbsp extra milk or cream for serving
Instructions
- 1Core the apple and dice it into small bite-size pieces, leaving the skin on for color and texture.
- 2Melt the butter in a medium saucepan over medium heat.
- 3Add the diced apple and cook, stirring occasionally, until the pieces begin to soften and smell fragrant, about 3 minutes.
- 4Stir in the cinnamon, ginger, cardamom, cloves, and salt so the spices bloom in the butter.
- 5Pour in the oats and toast them with the apples for 1 minute, stirring constantly.
- 6Add the milk and water. Bring the mixture to a gentle simmer, then reduce heat to medium-low.
- 7Cook, stirring often and scraping the bottom, until the porridge is thick and creamy and the oats are tender, 6 to 8 minutes.
- 8Stir in most of the maple syrup, reserving a little for finishing; taste and adjust sweetness if needed.
- 9Remove from heat and let the porridge stand 1 minute to thicken further.
- 10Divide between two warm bowls.
- 11Top with the toasted walnuts, a drizzle of the remaining maple, and a splash of extra milk or cream.
- 12Serve immediately while steaming.
