Sweet Potato Hash Skillet
In Southern cooking, a hash skillet means crispy edges and a one-pan morning. Sweet potatoes take the lead here, seared until deeply golden with onion, peppers, and kale before eggs finish the brunch.

Ingredients
- 1 1/2 lb sweet potatoes
- 1 medium yellow onion
- 1 red bell pepper
- 3 cups chopped kale leaves
- 3 tbsp extra-virgin olive oil
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 large eggs
- 1 tsp minced fresh rosemary
- 2 sliced green onions
- to serve hot sauce
Instructions
- 1Peel the sweet potatoes and cut them into 1/2-inch dice so they cook through evenly. Dice the onion and red bell pepper into similar-size pieces; strip the kale from tough stems and roughly chop the leaves.
- 2Heat olive oil in a large 12-inch cast-iron skillet over medium-high heat until shimmering. Add the sweet potato cubes in a single layer and season with half the salt and pepper.
- 3Cook the sweet potatoes without stirring for 4 to 5 minutes to develop a deep golden crust on the bottom, then stir and continue cooking 8 to 10 minutes more, stirring occasionally, until mostly tender and browned in spots.
- 4Push the potatoes to the side, add the remaining oil, and tip in the onion and bell pepper. Sauté 4 to 5 minutes until the onion turns translucent and the pepper softens.
- 5Sprinkle in the smoked paprika, garlic powder, minced rosemary, and remaining salt. Stir everything together so the spices coat the vegetables and become fragrant, about 30 seconds.
- 6Add the chopped kale and a splash of water (about 2 tablespoons). Cover the skillet for 2 minutes to steam-wilt the greens, then uncover and toss until the kale is tender and bright.
- 7Use a spoon to make four shallow wells in the hash. Crack an egg into each well. Reduce the heat to medium-low, cover the skillet, and cook 4 to 6 minutes until the whites are set but the yolks are still runny (or longer for firmer yolks).
- 8Remove from heat. Grind fresh black pepper over the eggs and scatter the sliced green onions across the skillet.
- 9Bring the whole skillet to the table for a family-style brunch feel. Serve each portion with hot sauce and extra green onion if desired. The crispy edges of the sweet potato are the best part—scrape them up.
