Ingredients

  • 3 cups fresh sugar pumpkin or pie pumpkin, peeled and diced 1/2-inch
  • 10 oz cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 1 red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 tsp fresh thyme leaves
  • 1 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp ground cinnamon
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 3 tbsp olive oil
  • 4 large eggs
  • 2 tbsp fresh parsley, chopped
  • to taste hot sauce or chili flakes optional

Instructions

  1. 1Preheat a large 12-inch cast-iron or heavy skillet over medium-high heat and add half the olive oil.
  2. 2Add the diced pumpkin in a single layer and cook undisturbed for 3 to 4 minutes until the undersides begin to caramelize and turn golden.
  3. 3Stir and continue cooking, tossing occasionally, until the pumpkin is tender-crisp and browned in spots, about 6 to 8 minutes total; transfer to a plate.
  4. 4Add the remaining oil to the same skillet, then tip in the mushrooms and cook without stirring for 2 minutes so they release moisture and brown.
  5. 5Add the onion and bell pepper; sauté, stirring often, until the vegetables soften and the mushrooms are deeply golden, 5 to 6 minutes.
  6. 6Stir in the garlic, thyme, smoked paprika, cumin, cinnamon, salt, and pepper; cook just until fragrant, about 30 seconds.
  7. 7Return the pumpkin to the skillet and toss everything together over medium heat for 2 minutes so the spices coat the hash evenly.
  8. 8Make four small wells in the hash with a spoon and crack an egg into each well.
  9. 9Cover the skillet and cook over medium-low heat until the egg whites are set and the yolks are still runny or cooked to your liking, 4 to 6 minutes.
  10. 10Scatter chopped parsley over the top, add chili flakes if desired, and serve straight from the skillet while hot.
