Mushroom Herb Breakfast Hash

Hash takes its name from the French hacher, to chop—and this American skillet breakfast leans into that spirit. Earthy cremini mushrooms, rosemary, and thyme meet crisp Yukon Golds and a touch of sweet apple, finished with eggs.

Ingredients

  • 1 1/4 lb Yukon Gold potatoes
  • 10 oz cremini mushrooms
  • 1 large Gala or Honeycrisp apple
  • 1 red bell pepper
  • 1 medium yellow onion
  • 1 tsp minced fresh rosemary
  • 1 tsp fresh thyme leaves
  • 3 garlic cloves
  • 4 large eggs
  • 3 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 1/4 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika
  • 3 tbsp chopped fresh parsley
  • optional hot sauce or chili crisp for serving

Instructions

  1. 1Scrub the potatoes and cut them into 1/2-inch cubes. Place in a microwave-safe bowl, cover, and microwave 4 to 5 minutes until just starting to soften; drain any moisture.
  2. 2Slice the mushrooms, dice the onion and bell pepper, core and dice the apple, and mince the garlic and rosemary.
  3. 3Heat olive oil in a large cast-iron or heavy skillet over medium-high heat. Add the par-cooked potatoes in a single layer, season with half the salt and the smoked paprika, and cook undisturbed 4 minutes to form a golden crust.
  4. 4Flip and stir the potatoes, then push them to the edges. Add the remaining oil and the butter to the center. Tip in the mushrooms and onion; cook, stirring occasionally, until the mushrooms brown and the onion softens, 6 to 7 minutes.
  5. 5Add the bell pepper, apple, garlic, rosemary, and thyme. Season with remaining salt and black pepper. Continue cooking, stirring every minute or so, until the apple softens slightly and everything is deeply fragrant and caramelized at the edges, about 4 minutes more.
  6. 6Taste and adjust seasoning. Create four small wells in the hash with the back of a spoon.
  7. 7Crack an egg into each well. Cover the skillet and cook over medium heat until the whites are set and the yolks are still runny, 3 to 5 minutes, or longer if you prefer firmer yolks.
  8. 8Scatter chopped parsley over the top. Bring the skillet to the table so everyone can scoop their own portion with an egg, adding hot sauce or chili crisp if desired.
