Ingredients

  • 2 cups plain Greek yogurt
  • 2 large ripe peaches, sliced
  • 3 tbsp peach preserves
  • 1 cup granola
  • 2 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/4 cup sliced almonds
  • 8 leaves fresh mint leaves
  • 1 tbsp chia seeds
  • 1 tsp lemon zest

Instructions

  1. 1Stir the Greek yogurt with the vanilla and half of the honey in a bowl until silky and lightly sweetened.
  2. 2Taste and adjust sweetness if needed so the yogurt stays tangy enough to balance the peaches.
  3. 3Warm the peach preserves briefly in the microwave for 15 seconds so they loosen into a spoonable drizzle.
  4. 4Dice one peach into small cubes and leave the second peach in thin half-moons for pretty layering.
  5. 5Spoon a generous base of yogurt into each serving bowl, then scatter a layer of diced peach and a swirl of loosened peach preserves.
  6. 6Add a crunchy layer of granola and a sprinkle of chia seeds so every bite has texture contrast.
  7. 7Repeat with another spoonful of yogurt, more peach slices, and the remaining preserves for a tall, colorful parfait.
