- 3 cups plain Greek yogurt
- 3 medium crisp apples (Fuji or Pink Lady)
- 3 Tbsp honey
- 1 cup granola (low-sugar)
- 8 leaves fresh mint leaves
- 1/4 cup toasted sliced almonds
- 1 tsp fresh lemon zest
- 1/2 tsp ground cinnamon
- 1 pinch pinch of sea salt
Instructions
- 1Core the apples and cut two of them into neat half-moons a quarter-inch thick; leave the skins on for color and fiber.
- 2Cut the remaining apple into fine matchsticks and toss them lightly with a squeeze of lemon if you have it on hand so they stay bright.
- 3In a small bowl, stir the Greek yogurt with the honey, lemon zest, cinnamon, and salt until smooth and lightly sweetened; taste and adjust if needed.
- 4Spoon a layer of the seasoned yogurt into the bottom of four clear glasses or jars, filling each one-third full.
- 5Arrange a layer of apple half-moons over the yogurt, tucking them against the glass so the fruit shows through for a pretty presentation.
- 6Add a second layer of yogurt, then scatter a spoonful of granola and a few apple matchsticks on top of each parfait.
- 7Finish with the remaining yogurt, a final sprinkle of granola, the toasted almonds, and torn fresh mint leaves.
- 8Serve immediately so the granola stays crunchy, or cover and chill up to 2 hours; the cool yogurt and juicy apple slices should taste clean and refreshing with every spoonful.
