Ingredients

  • 1 1/2 cups rolled oats
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 large eggs
  • 3/4 cup plain Greek yogurt
  • 1/2 cup milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 2 medium crisp apples
  • 2 cups fresh grapes
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh thyme leaves
  • 2 tbsp butter or oil for pan

Instructions

  1. 1Core the apples and grate them on the large holes of a box grater; squeeze out excess liquid gently with your hands and set the grated apple aside. Halve the grapes and place them in a small saucepan with the lemon juice and half the thyme.
  2. 2Set the saucepan over medium heat and cook the grapes, stirring often, until they soften and release juices into a loose jammy sauce, about 6 to 8 minutes. Remove from heat, stir in remaining thyme, and keep warm.
  3. 3In a blender or food processor, pulse the oats until they resemble a coarse flour. Transfer to a mixing bowl and whisk in the baking powder, cinnamon, and salt.
  4. 4In a separate bowl, beat the eggs until frothy, then whisk in the Greek yogurt, milk, maple syrup, and vanilla until smooth.
  5. 5Fold the wet mixture into the dry oat mixture just until combined; the batter will be thick. Gently fold in the grated apple so it is evenly distributed without overmixing.
  6. 6Heat a large nonstick skillet or griddle over medium heat and lightly grease with butter or oil. When a drop of water sizzles, scoop about 1/4-cup portions of batter onto the surface, spacing them apart.
  7. 7Cook until the edges look set and bubbles form on the surface, about 2 to 3 minutes. Flip carefully and cook the second side until golden brown and cooked through, another 2 minutes. Transfer finished pancakes to a warm plate and repeat with remaining batter, regreasing as needed.
  8. 8Stack the pancakes on plates, spoon the warm grape compote generously over the top, and finish with any extra thyme leaves. Serve immediately while the pancakes are fluffy and the compote is still glossy.
