Ingredients

  • 1 cup water
  • 6 Tbsp unsalted butter
  • 2 Tbsp granulated sugar
  • 1/2 tsp kosher salt
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 tsp vanilla extract
  • 4 cups vegetable oil
  • 1/2 cup granulated sugar
  • 2 tsp ground cinnamon
  • 4 oz bittersweet chocolate
  • 1 cup whole milk
  • 2 Tbsp unsweetened cocoa powder
  • 2 Tbsp granulated sugar

Instructions

  1. 1In a medium saucepan combine water, butter, sugar, and salt. Bring to a boil over medium-high heat.
  2. 2Remove from heat and immediately stir in the flour with a wooden spoon until a smooth dough forms and pulls away from the sides.
  3. 3Let the dough cool for 2 minutes, then add the eggs one at a time, beating vigorously after each until fully incorporated. Stir in vanilla. The dough should be smooth and glossy.
  4. 4Transfer dough to a piping bag fitted with a large star tip (about ½-inch opening).
  5. 5Heat vegetable oil in a large heavy pot or deep skillet to 375 °F (use a thermometer).
  6. 6While oil heats, mix sugar and cinnamon in a shallow bowl; set aside.
  7. 7Pipe 6-inch strips of dough directly into the hot oil, using kitchen scissors to snip each churro. Fry 3–4 at a time, turning occasionally, until golden brown and crisp, about 4–5 minutes.
  8. 8Remove churros with a slotted spoon and drain on paper towels for 30 seconds, then roll in the cinnamon-sugar mixture while still warm.
  9. 9For the chocolate sauce: chop the bittersweet chocolate and place in a heatproof bowl.
  10. 10In a small saucepan heat milk, cocoa powder, and sugar over medium heat, whisking until smooth and just simmering.
  11. 11Pour hot milk mixture over chopped chocolate; let sit 1 minute, then whisk until thick and glossy.
  12. 12Serve warm churros immediately with the thick chocolate dip on the side.
