Warm Mitashi-Style Sweet Soy Dumplings

Warm glutinous-rice dumplings simmered tender, then lacquered in sweet soy-mirin glaze and toasted sesame. They nod to Vinegar Rice Before Dusk, when Edo canal stalls trusted haste and vinegar after the catch.

Ingredients

  • 1 cup glutinous rice flour
  • 0.5 cup water
  • 3 tbsp sugar
  • 3 tbsp soy sauce
  • 2 tbsp mirin
  • 2 tbsp toasted sesame seeds
  • 0.25 cup short-grain rice
  • 1 tsp rice vinegar

Instructions

  1. 1Mix glutinous rice flour with water and sugar to form a smooth dough, then shape into small dumplings.
  2. 2Cook dumplings in simmering water until they float, then drain and keep warm.
  3. 3In a small saucepan combine remaining sugar, soy sauce, mirin, and a splash of water; simmer until slightly thickened.
  4. 4Cook a small amount of short-grain rice, season lightly with rice vinegar while warm, and shape into two small bases.
  5. 5Place warm dumplings over the rice bases, spoon sweet soy glaze over top, and sprinkle with toasted sesame seeds.
