
Dried-Apple Skillet Cake with Brown Sugar

Ingredients
- 2 cups dried apples
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup buttermilk
- 1/3 cup molasses
- 3/4 cup brown sugar
- 1/2 cup unsalted butter
- 1 tsp ground cinnamon
- 1 large egg
Instructions
- 1Simmer dried apples in water for 15 minutes until plump and soft; drain, reserving liquid, and chop roughly.
- 2Melt butter in a 10-inch cast-iron skillet; stir in brown sugar and cinnamon, then spread chopped apples evenly over the mixture.
- 3Whisk together flour, baking soda, salt, remaining brown sugar, buttermilk, molasses, egg, reserved apple liquid, and melted butter until smooth.
- 4Pour batter over apples in the skillet and bake in a preheated 375°F oven for 30-35 minutes until a toothpick inserted in the center comes out clean.
- 5Let cool 5 minutes, then invert onto a plate so the apple layer is on top.
