
Honey-Ginger Sweet Potatoes with Toasted Sesame
Caramelized sweet-potato wedges roast in sesame oil with honey and sharp ginger, finished with toasted sesame and a spark of gochugaru. They echo the kimjang courtyards of Brine Before the Mountain Frost, when autumn labor turned whole yards red for the freeze ahead.

Ingredients
- 4 medium sweet potatoes
- 2 tbsp fresh ginger
- 3 tbsp honey
- 1 tbsp sesame oil
- 2 tbsp toasted sesame seeds
- 2 scallions
- 0.5 tsp coarse salt
- 0.5 tsp gochugaru
Instructions
- 1Preheat oven to 425°F and line a sheet pan with parchment.
- 2Peel and cut the sweet potatoes into 1-inch wedges, toss with sesame oil, salt, and gochugaru, then spread in a single layer.
- 3Roast for 30 minutes, turning once, until caramelized and tender.
- 4While roasting, mince the ginger and thinly slice the scallions.
- 5Remove potatoes from oven, immediately drizzle with honey and sprinkle with ginger and toasted sesame seeds, tossing gently to coat.
- 6Garnish with sliced scallions and serve warm.
