Bitter Hot Chocolate Frothed with Vanilla and a Honey Drizzle

Ingredients

  • 1/4 cup unsweetened cocoa powder
  • 2 cups water
  • 1/2 pod vanilla bean
  • 2 tbsp honey
  • 1/8 tsp guajillo chile powder
  • pinch salt
  • 2 tbsp pumpkin seeds

Instructions

  1. 1Finely grind or scrape the vanilla bean and combine with the cocoa powder, chile powder, salt, and water in a bowl.
  2. 2Whisk until a smooth paste forms, then add the remaining water.
  3. 3Pour into a saucepan and bring to a simmer over medium heat, whisking vigorously for 4-5 minutes to create foam.
  4. 4Divide between two cups, drizzle each with honey, and sprinkle with lightly toasted pumpkin seeds.
  5. 5Serve immediately while hot and foamy.
