
Warm Chile-Cacao Atole with Toasted Pepitas

Ingredients
- 1/2 cup masa harina
- 3 tbsp unsweetened cocoa powder
- 1 dried guajillo chile
- 3 cups water
- 1/3 cup pepitas
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- 1Toast the pepitas in a dry skillet over medium heat until lightly golden and fragrant, then set aside.
- 2Stem and seed the guajillo chile, then finely grind or blend it into a powder.
- 3In a medium saucepan whisk together the masa harina, cocoa powder, ground chile, salt, and water until smooth.
- 4Add the remaining water and vanilla extract, bring to a gentle simmer over medium heat, and cook for 12-15 minutes while whisking frequently until thickened and smooth.
- 5Pour into mugs, top with the toasted pepitas, and serve hot.
