Ingredients

  • 1 1/2 cups all-purpose flour
  • 2/3 cup molasses
  • 3/4 cup boiling water
  • 1 tsp baking soda
  • 4 tbsp unsalted butter
  • 1/3 cup brown sugar
  • 1 large egg
  • 1 tsp ground ginger
  • 1/2 tsp salt

Instructions

  1. 1Preheat oven to 350°F and butter an 8-inch square baking dish.
  2. 2In a bowl whisk together flour, ginger, and salt. In a separate large bowl stir baking soda into boiling water, then add molasses, melted butter, brown sugar, and egg. Whisk until smooth.
  3. 3Add the dry ingredients to the wet mixture and stir until just combined with no large lumps.
  4. 4Pour batter into the prepared dish and bake for 30-35 minutes until the center is set but still soft and a toothpick comes out with moist crumbs. Serve warm by the spoonful.
