
Warm Purple-Corn Spiced Custard Cups

Ingredients
- 1/2 cup purple corn flour
- 2 cups milk
- 1/4 cup honey
- 1/2 tsp ground cinnamon
- 1/8 tsp ground cloves
- 2 egg yolks
- 2 tbsp cornstarch
- pinch salt
- 1 tsp fresh orange zest
Instructions
- 1Whisk together the purple corn flour, cornstarch, cinnamon, cloves, and salt in a medium saucepan.
- 2Gradually whisk in the milk and honey until smooth, then place over medium heat and bring to a gentle boil while stirring constantly.
- 3Reduce heat to low and simmer for 8 minutes until the mixture thickens to a pudding consistency.
- 4In a small bowl, whisk the egg yolks with a ladleful of the hot pudding, then stir this back into the saucepan and cook for 2 more minutes without boiling.
- 5Remove from heat, stir in the orange zest, and divide into four small cups; serve warm.
