
Ginger Scallion Rice Congee

Ingredients
- 1 cup long-grain white rice
- 8 cups water
- 2-inch piece fresh ginger
- 6 scallions
- 4 dried shiitake mushrooms
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp salt
- 2 tbsp dried shrimp
Instructions
- 1Rinse the rice well until the water runs mostly clear.
- 2In a large pot combine rice, water, sliced ginger, chopped dried shiitakes, and salt; bring to a boil then reduce to a gentle simmer.
- 3Simmer uncovered for 35-40 minutes, stirring occasionally, until the rice breaks down into a creamy porridge; add a splash of water if it becomes too thick.
- 4Stir in soy sauce, sesame oil, most of the sliced scallions, and dried shrimp; simmer 5 more minutes.
- 5Ladle into bowls and finish with remaining fresh scallions and a few drops of sesame oil.
