Skillet Fried Apples with Cider Oatmeal

Ingredients

  • 2 cups rolled oats
  • 3 cups apple cider
  • 4 medium firm apples
  • 4 tbsp unsalted butter
  • 1/4 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 tsp salt

Instructions

  1. 1Combine the oats, apple cider, and salt in a medium saucepan over medium heat.
  2. 2Bring to a simmer and cook, stirring occasionally, for 15 minutes until the oatmeal is thick and creamy.
  3. 3While the oatmeal cooks, core and slice the apples into 1/2-inch wedges.
  4. 4Melt the butter in a large cast-iron skillet over medium heat, add the apple slices, brown sugar, cinnamon, cloves, and remaining cider.
  5. 5Cook, turning the apples occasionally, for 12-15 minutes until they are tender and the liquid has reduced to a syrupy glaze.
  6. 6Spoon the warm oatmeal into bowls and top generously with the skillet fried apples and their sauce.
