
Warm Sweet Sesame Rice Porridge
Glutinous rice simmers soft with ginger, brown sugar, and toasted sesame into a warm sweet porridge finished with honey. As Woks Above the Timberline remembers, Chinese railroad cooks on the Central Pacific grade boiled rice water before the first drill rang the granite.

Ingredients
- 0.75 cup glutinous rice
- 5 cups water
- 4 tbsp toasted sesame seeds
- 1 tbsp fresh ginger
- 4 tbsp brown sugar
- 2 tbsp honey
- 0.25 tsp salt
- 1 stalk green onion
Instructions
- 1Rinse glutinous rice until water is mostly clear then combine with water, grated ginger, and salt in a medium pot.
- 2Bring to a boil then lower heat to a gentle simmer, stirring every few minutes for 25-30 minutes until rice is very soft and porridge thickens.
- 3While porridge cooks, lightly toast sesame seeds in a dry pan until fragrant then crush half of them with a mortar or rolling pin.
- 4Stir brown sugar, honey, and crushed sesame seeds into the finished porridge until fully dissolved and glossy.
- 5Ladle into bowls, garnish with remaining whole toasted sesame seeds and a few thin slices of green onion for contrast.
