Ingredients
- 1.5 cups semolina flour
- 1 cup all-purpose flour
- 2 orange
- 1 lemon
- 1/3 cup raisins
- 1/3 cup honey
- 1/2 tsp cinnamon
- for frying olive oil
- 1 tbsp sugar
- 3/4 cup water
Instructions
- 1Combine the semolina flour, all-purpose flour, sugar, and cinnamon in a bowl.
- 2Gradually add the water and the zest of one orange and one lemon, mixing until a soft dough forms.
- 3Knead the dough for 5 minutes until smooth, then let it rest covered for 15 minutes.
- 4Roll the dough out to 1/4-inch thickness on a lightly floured surface and cut into 2-inch diamonds or strips.
- 5Heat 2 inches of olive oil in a deep pan to 350°F and fry the pieces in batches until golden and crisp, about 3 minutes per side.
- 6Drain the fried dough on paper towels, then immediately toss with the juice of the remaining orange and lemon, soaked raisins, and a generous drizzle of honey.
- 7Sprinkle lightly with additional cinnamon before serving warm.
